Why Use Freshly Milled Wheat Quickly?
Freshly milled wheat, like the kind made from heritage grains such as Red Fife, retains the bran and germ, which are the nutrient-rich outer layers of the wheat berry. While these add incredible flavor and nutrition, they also contain natural oils that can spoil over time. For this reason, freshly milled wheat should be used as soon as possible, ideally immediately but at most within 1-2 weeks, to ensure its best taste and quality.
Why Commercial Flours Last Longer
Commercial flours are shelf-stable because they undergo a refining process that removes the bran and germ. This eliminates the oils that can cause rancidity, but it also strips away much of the flavor, nutrients, and fiber, leaving primarily the starchy endosperm.
By using freshly milled wheat, you’re embracing a more wholesome, flavorful, and nutritious approach to baking. Just be sure to store it in a cool, dry place or refrigerate/freezer for extended freshness. 🌾
